Vegan Watermelon Gazpacho


Ingredients:

4 cups seedless watermelon, cubed

1 large tomato, diced

1 cucumber, peeled and diced

1 red bell pepper, diced

1/2 red onion, finely chopped

2 cloves of garlic, minced

2 tablespoons fresh lime juice

2 tablespoons extra-virgin olive oil

1 tablespoon fresh basil, chopped

1 tablespoon fresh mint, chopped

Salt and pepper to taste

Optional toppings: chopped cucumber, diced avocado, fresh herbs or my favorite… more basil and a few tomato slices

Instructions:

1. Add the watermelon, tomato, cucumber, bell pepper, red onion, and garlic to a blender or food processor. Blend until smooth.

2. Pour the blended mixture into a large bowl. Stir in the lime juice, olive oil, basil, and mint.

3. Season with salt and pepper to taste. Adjust the flavors if needed.

4. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together and chill.

5. Once chilled, give the gazpacho a good stir. Taste and adjust the seasonings if desired.

6. Serve the watermelon gazpacho chilled in individual bowls or glasses.

7. Garnish with chopped cucumber, diced avocado, and fresh herbs if desired.
